Hey everyone! Welcome to my first What I Eat In A Day, where I show you 3 meal ideas for busy people: quick cheese ciabatta, a tofu curry and a meal prep idea that will turn leftovers into quick dinners which are different each night! I’m super excited to get these recipes to you in order to help make healthy eating, easier!

TOFU CURRY RECIPE:

Season tofu with:

½ teaspoon salt and black pepper
1/8th teaspoon paprika
1 teaspoon all purpose seasoning
1 tablespoon mixed herbs
1 teaspoon garlic powder
1 tablespoon Maggi Liquid Seasoning
Half a squeezed lemon
1 spring onion finely chopped
Add all the above to the tofu. Leave in the fridge and allow to marinade for a minimum of one hour. It can be left in the fridge for up to 4 days.

SAUCE:
1 tablespoon oil
1 onion
4 cloves of garlic
1/8th teaspoon of salt
1/8th teaspoon of black pepper
1 teaspoon ground turmeric
1/4 teaspoon paprika
1 teaspoon curry powder
6 sliced mushrooms
1 red sliced pepper
Large handful of finely sliced cherry tomatoes
1 cup of water
1/2 cup of unsweetened plant milk

1) Place the oil, onions, garlic and salt in the pan on a medium heat. Cook/sweat the onions for 3-5 mins until they are softened.
2) Then add turmeric, black pepper, paprika and curry powder until they become fragrant in the pan.
3) Once fragrant, add the mushrooms, red pepper and cherry tomatoes into the pan and cook for 5-7 mins until they are cooked.
4) Add water and plant-based milk. Cook for a further 2 mins.
5) Add the cooked tofu to the sauce. Taste the curry and add salt to taste.
