Preparation: EASY!
Ingredients;
* Whole chicken
* Salt,pepper, lots of herbs de provence or mixed herbs, lots of paprika, onion powder, and a bit of garlic powder
* 6 garlic gloves( peeled , crushed)
*1 onion sliced medium to thin
* bunch of fresh rosemary
* bunch of fresh thyme
* a few fresh sage leaves( optional)
* one lemon, remove all the skin and cut in 1/2
* cup of white wine or beer
* 1 cup chicken broth ( + or -)
* 2 tablespoons butter
Preheat oven to 380
* cut whole chicken deep into the center of the Brest bone and open the chicken; butterfly”
* evenly season the skin side with salt,pepper, lots of herbs de provence or mixed herbs, lots of paprika, onion powder, and a bit of garlic powder; flip and do the same with the insides;
* heat a good splash of olive oil in the cast iron pan; brown the skin side till super crispy. Use medium heat. Remove chicken from pan and place in a plate
* immediately add the onions, garlic, thyme, rosemary, sage and sauté until onions and garlic brown( stir occasionally)
*add the lemon, white wine( or beer) reduce for a couple of minutes and add the chicken broth. Season with salt/pepper
* place the chicken skin side up and place the cast iron pan in the oven- bake foe about 45 minutes depending on size!
