Ingredients for:
1) Tequila Lime Shrimps:
– Shrimps – 400 Grams
– Salt – ½ Teaspoon
– Black Pepper – ½ Teaspoon
– Paprika – ½ Teaspoon
– Olive Oil – 1 Tablespoon
– Chili Flakes – ½ Teaspoon
– Green Pepper – 1/3 Cup
– Red Pepper – 1/3 Cup
– Spring Onions – 1/3 Cup
– Lemon Zest – 1 Tablespoon
– Coriander – ¼ Cup
– Tequila – 1/3 Cup
– Tomato – 1/3 Cup
– Compound Butter – 1 Tablespoon
2) Compound Butter:
– Butter – 1/2 Cup
– Chipotle Sauce – 1 Teaspoon
– Chili Paste – 1 Teaspoon
– Lime Zest– 1 Teaspoon
– Coriander – 1/8 Cup
– Lime Juice – Juice of ½ Lime
– Salt – to taste
Tequila Lime Shrimps Preparation:
– To prepare the compound butter, mix the butter, chipotle sauce, chili paste, lime zest, coriander, lime juice, and salt in a mixing bowl and refrigerate for 1 hour.
– In a mixing bowl, add the shrimps, salt, black pepper, paprika, chili flakes, and olive oil. Mix well and let marinate for 30 minutes.
– Preheat a pan with olive oil and cook the shrimps for 30 seconds per side.
– Add the green pepper, red pepper, green onion, lemon zest, and green onion. Cook for an additional minute.
– Add the tequila and carefully ignite it until all the alcohol is burned off.
– Add the tomato and the compound butter.
– Let the butter melt, mix well, and serve hot.
