Today we’re making a low-carb, keto-friendly adult version of a childhood favorite, using a delectable cheesy chaffle instead of a dreary, soggy wheat bun.
We’re making: Chaffley Joes
For the beef filling, you’ll need:
Ground beef
Onion, finely chopped
Celery, finely chopped
Carrot, shredded
Green bell pepper, finely chopped
Garlic, finely chopped
Red wine vinegar (apple cider vinegar would work as well)
Tomato paste
Dijon mustard
Worcestershire sauce
Cayenne pepper
Black pepper, freshly ground
Smoked paprika
Chicken stock
Bay leaf
For the chaffle, you’ll need:
Eggs
Cream cheese
Almond flour
Coconut flour
Lupin flour
Erythritol sweetener
Baking powder
Onion powder
Garlic powder
Mozzarella, shredded
Parmigiano-Reggiano, shredded
For the sautéed vegetables, you’ll need:
Avocado oil (or any high-heat tolerant oil)
Onion
Green bell pepper
Portobello mushroom
Salt
Pepper
Assemble the Chaffley Joe on a chaffle, adding pickles (or pickled jalapenos, Series 01, Episode 01) as desired.
