Makes a dozen Papusas
Ingredients
Dough
• 4 c. Masa
• 3-4 c. warm water
• 1-2 tsp of salt
• 1 tsp of paprika – optional
Filling:
• 2-4 c. of shredded Oaxaca, Chihuahua and mozzarella cheese
• 1 c each of shredded meat choice or refried beans
Curtido
• ¼ head of cabbage
• Shredded carrots or coleslaw mix
• 2 c. boiling water
• ½ c. distilled vinegar
• ½ tsp of oregano
• 1 tsp salt
• ½ tsp sugar – optional
Directions
Mix Curtido ingredients and refrigerate for a minimum of 4 hours
