Shakshuka is a classic Middle Eastern dish where eggs are poached in spice filled tomato stew. It’s perfect for breakfast, brunch, lunch, or dinner. This easy shakshuka is made with eggs that are gently poached in a simmering mixture of tomatoes, bell peppers, onions, and garlic. A few warm spices and some fresh herbs complete this satisfying one-skillet dish!
Ingredients (3 servings):
1 tbsp Extra virgin olive oil
1 medium onion (sliced)
1/2 medium capsicum (sliced)
1 cloves garlic (chopped)
1 can diced tomato (no sugar added)
1 tbsp masala mix
1 tsp paprika
Himalaya salt (to taste)
6 Eggs
Fresh parsley/cilantro for garnish
