Ingredients.

Pork:
-Pork Shoulder (Also known as Pork Butt)
-2 Tsp Fennel Seeds
-1 Tsp Cumin Seeds
-1 Tsp Black Peppercorns
-1 Tsp Corriander Seeds
-1 Tsp Mustard Seeds
-100g Brown Sugar
-25g White Sugar
-1 Tsp Cinnamon
-2 Tsp Garlic Powder
-70g Smoked Salt
-4 Tsp Smoked Paprika
-3 Tsp Paprika
-1 Tsp Oregano
-1 Tsp Cayenne

BBQ Sauce:
-1 Onion
-10 Cloves of Garlic
-A Thumb of Ginger
-Bunch of Sage
-Bunch of Parsley
– 7 Bay Leaves
– 2 Oranges
– 1 Lemon
– 1 Tsp Cumin
– 2 Tbsp Smoked Paprika
– 2 Tbsp Fennel Seeds
– 6 Cloves
– 2 Tbsp Smoked Salt
– 1 Tsp Cayenne
– 150g Brown Sugar
– 5 Tbsp Balsamic
– 200ml Ketchup
– 1 Tsp Black Treacle
– 2 Tbsp Worcester Sauce
– 2 Tbsp Dijon Mustard
– Pepper
– 200ml Apple Juice
– 1 Tbsp Soy Sauce
– 2 Tbsp Maple Syrup

Cocktail:
– Half an orange
– 2 Tbsp of Thick cut orange or Apricot Marmalade
– 25ml Campari or Similar
– 50ml Good Bourbon Whiskey
