Trout Brine
1/2Cup Kosher Salt
1/2Cup Brown Sugar
1TB Honey
Fresh black pepper
Rub and set in fridge for 6-12 hours, rinse thoroughly and put back in fridge to form a “pellicle” this takes around 3 hours
For the glaze
1TB Brown Sugar
1TB Honey
1TB Apple Cider Vinegar
Mix it and that’s it!
Trout Dip
12-20oz Smoked Trout
1/4cup Cream Cheese
2 TB Marscapone Cheese
2 TB Sour Cream
1 Lemon, zested
1/2 Lemon, juiced
1 Bunch of Chives, thin slice
Pepper and smoked paprika to taste
Mix all together and let cool before serving.
