Ingredient recap
TURNIP SOUP (6 large servings)
1 large onion chopped
1 stalk celery chopped
800g turnips
800g potatoes
1L vegetable stock
3 large cloves roasted garlic
200mls crème fraîche
Few sprigs lemon thyme/thyme/3/4 Tsp dried thyme
Croutons as needed (in video, prepared with 1 tbsp extra virgin olive oil and 1/2 Tsp dried thyme)
Total cook time is about 20 mins
HEARTY VEGETABLE SOUP (12 large servings. Use a large stock pot)
1 large onion chopped
2 stalks celery chopped
1 large shallot chopped
3 thumbs ginger left in 3 separate pieces
3 large cloves grated garlic
2 carrots
1 tbsp dark soy sauce (sub 1 tbsp coconut aminos)
3 plantains (optional)
5 eddoes (subs potato)
10 okra (sub green beans but cook only for a few minutes)
3 sweet potatoes (small/medium sized)
300g red lentils
1 can coconut milk
Boiling water to top off (3.5-4 L)
Few sprigs lemon thyme/thyme/1 heaped Tsp dried thyme
SEASONING MIX
1 heaped Tsp annatto (sub paprika)
1/2 Tsp ground cumin
1/2 Tsp ground coriander
1/2 Tsp turmeric
Salt to taste
DUMPLINGS
400g plain flour
1 Tsp salt
250 mls water
Total cooking time is around 45 mins
