Hummus, that creamy dip that hails from the Middle East, has a reputation as a clean, healthy food. It deserves it. All the main ingredients are super foods in their own right. It’s got chickpeas, sesame paste (tahini), garlic, and olive oil in most traditional versions.
INGREDINTS:
2 cups cooked chickpeas
1/4 cup fresh lemon juice (1 large lemon)
1/4 cup well-stirred tahini
1 small garlic clove, minced
3 tablespoons extra-virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
Salt to taste
2 to 3 tablespoons (30 to 45 ml) water
FOR GARNISHING
Dash ground paprika
fresh olives
coriander leaves
some chickpeas
