breakfast: soaked cookie dough oats
in a bowl, combine:
– 3/4 cup quick oats
– 1/2 tbsp maca powder
– splash of hot water
– 1/2 tbsp maple syrup
– 1/4 cup vegan choc-chips
– 1/2 cup plant-based milk (i used soy)
put in the fridge for 30 mins, before removing it and serving it with fresh fruit and nut butter
lunch: yummy nourishing salad
crispy chickpeas:
– 400g cooked chickpeas, drained and rinsed
– 1 tsp olive oil
– pinch of salt
+ other herbs and spices as desired
toss these together in a bowl, pour onto a baking tray and bake in the oven at 180 degrees celsius for 10-15 minutes
tahini dressing:
in a bowl, combine:
– 1/4 cup tahini
– juice of 1 lemon
– pinch of salt
– 2 tbsp water
– 2 tsp maple syrup
serve both of these in a salad with:
– cherry tomatoes
– spinach
– rocket
– snow pea sprouts
– fresh parsley
– dried goji berries
– raw cashews
– hemp seeds
smokey black bean enchiladas:
tomato sauce:
in a vitamix, blend:
– 300g tinned tomatoes
– 1 clove of garlic
– 1 tbsp spring onions
– 1 tbsp fresh coriander
– 1 tsp smoked paprika
– 1/2 tsp salt
until smooth
smokey black beans:
in a saucepan, fry and mix:
– 1 tsp olive oil
– 200g cooked black beans, rinsed and drained
– 1/2 tsp liquid smoke
– 1/4 tsp salt
– 1 tsp smoked paprika
for 3-5 minutes and then remove from the heat
cashew cheese sauce:
in a vitamix, blend:
– 3/4 cup cashews, soaked for 15 mins in hot water and drained
– 1/4 cup nutritional yeast
– the juice of 1/2 a lemon
– 1 clove of garlic
– 1/2 cup of water
– pinch of salt
until smooth
1. fill baking tray with tomato sauce
2. roll black beans in tortillas, before placing in the tomato sauce mixture
3. bake in the oven for 18 mins or until golden (at 180 degrees celsius)
4. serve with cashew cheese sauce and sprouts – yum!
