Ingredients :
1-2 fresh mackerel (gutted and cleaned)
1 tsp salt
1 Maggie cube
1 tbsp fresh lemon juice
1 tbsp olive oil
1 tsp hot pepper
– Slash the mackerel with a sharp knife on both sides as this creates more surface area for the marinade to work on
– Gently rub in the salt
– Combine the left over ingredients in a small bowl
– Brush the salted mackerel with the olive oil
– Preheat oven to 180C
– Pour the marinade over the mackerel and add to a bag or bowl and cover and leave in the fridge to marinade for 2-3 hours
– Place the fish on the baking tray lined with baking and foil paper. Roast in the oven for 35-40 minutes at 180C or until crispy
