1 lb red potatoes, peeled & boiled until fork tender
3 oz mozzarella cheese
1/2 parmesean cheese
salt & pepper
Breading:
3 eggs-beaten
1/2 all purpose flour
2 cups breadcrumbs
1 TBSP paprika
Peel potatoes, soak in cold water to remove starch. boil potatoes until fork tender. Cut mozzarella into cubes and place between parchment paper to remove water. In three separate bowls, place flour, beaten eggs and bread crumbs. Add salt, pepper & paprika to the bread crumbs. Drain and slightly cool the potatoes and grate them with a hand grater or a potatoe ricer into a large bowl. Add the paremesan cheese and mix until blended. Add salt. Make balls out of the potato mixture and make a hole and place the mozzarella inside. Fold the potato around it making a ball. Refrigerate while oil is heating over medium heat. Dip the ball into the flour, eggs, bread crumbs and back in the eggs and bread crumbs. Set aside until they are all coated. Place in heated oil and remove as soon as they are golden brown. Serve with ranch dressing or marinara sauce.
