Ingredients:
750 g flour
2 teaspoons of salt
120 g butter
2 eggs
180 g buttermilk / milk
150 g yeast water
20 g of sugar beet syrup
Butte for greasing the form
For the filling:
2 tablespoons of oil
500 g minced meat
salt
Pul beaver
2 cloves of garlic (pressed or grated)
300 g grated cheese (I took Gouda here)
100 g feta cheese
3 spring onions (cut into rolls)
To sprinkle:
sesame
Black cumin
In a large bowl, add the flour, salt, yeast water, butter, eggs, milk, and beet syrup. Now knead everything into a homogeneous dough and let it stand covered until it has doubled. Due to the natural yeast, this can take up to 24 hours.
In the meantime, prepare the filling once so that it can cool down. To do this, put a little oil in a pan and fry the minced meat there. Put it to the side in a bowl and then season it with salt, pul biber (alternatively, pepper and sweet paprika powder), and the grated garlic. Once it has cooled, add the cheese, feta cheese, and spring onions and mix thoroughly. Then put it in the refrigerator until you need the filling.
Has the dough risen? Then put it on a floured work surface and shape it into a strand. Now take off small pieces that fit easily in the palm of your hand. Now roll these into small balls and put them aside for the time being.
Now grease a baking dish with butter, in which the filled bierocks will go.
Now press the balls flat on the work surface and place the sheet of dough in your hand so that you form a small hollow. Now put a tablespoon of the previously made and cooled filling in the middle. Carefully press the ends together and “snap” them shut so that the filling does not run out during baking. Carefully shape the bierocks into balls again and place them in the greased baking dish

Brush the bierocks with a little water and then sprinkle with the sesame and black cumin.
They are then baked in the preheated oven with lower / upper heat at 170°C for about 35 minutes. Add a bowl of water here and sprinkle the bierocks with it as you slide it in.
