Ingredients for Popcorn Chicken:
– Chicken fillet/ boneless pieces cut into bite sized pieces- 250-300 gms
To be marinated with:
– Salt- 3/4 tsp
– Pepper powder- 3/4 tsp
– Buttermilk- 1 cup
Flour mixture for breading:
– All purpose flour (Maida)- 1 cup
– Pepper powder- 1/2 tsp
– Paprika- 1.25 tsp
– Red Chilli Powder- 3/4 or 1 tsp
– Garlic powder- 3/4 tsp
– Oregano- 1/2 tsp
– Salt- 3/4 tsp
– Baking powder- 1/4 tsp
– Oil for deep frying
Preparation:
– Wash and pat dry the chicken fillets/ boneless pieces. Cut them into small bite sized pieces.
– Add these pieces into a bowl. Add salt, pepper powder and pour the buttermilk over it.
– Mix it well. Set aside for an hour.
For the breading:
– Take a square glass bowl/ baking dish and pour the flour/ maida. Add all the items indicated and mix it well.
– Now take out the marinated chicken pieces one at a time and drop them in the flour mixture. Once 5/6 are placed, dredge them well with the flour mixture and keep them side by side on a plate. Repeat in batches of 5/6.
Process:
– Once the oil is medium hot, drop the breaded chicken pieces one at a time and fry in batches, to not crowd the pan.
– Give a stir after around a minute, once the chicken pieces start floating to the top.
– Keep stirring to fry uniformly.
– After another 2-3 mins, reduce heat and remove once golden brown and cooked through.
– Repeat the process for the next batches.

Ingredients for Fried Chicken Strips Recipe:
For marination:
– Boneless chicken strips – 2 large chicken fillets (250 gms) cut into strips
– Buttermilk- 2 cups
– Hot sauce- 2 tsp
– Salt- 1/4 tsp
– All purpose flour/Maida- 2 cups
– Salt- 2.5 tsp
– White Pepper- 3/4 tsp
– Chilli powder-1 tsp
– Garlic powder-1/4 tsp
– Baking powder- 1/4 tsp
– Eggs- 2 big
– Salt- a pinch (1/8 tsp)
– Refined oil- for deep frying
Preparation:
– Wash and pat dry the chicken fillets. Cut them into strips and set aside.
– To marinate the chicken strips, pour 2 cups of buttermilk in a bowl.
– Add 2 tsp of Hot sauce & 1/4 tsp of salt. Mix well.
– Add the chicken strips, mix well and set aside for an hour.
– Take 2 baking dish or square glass containers preferably one big and one small.
– Break 2 eggs into the smaller container and add a pinch (1/8 tsp) of salt. Whisk it well.
– In the bigger square container or baking dish, add 2 cups of flour/maida and add salt, white pepper, Chilli powder, garlic powder and baking powder. Mix it thoroughly with a small spatula or spoon.
– Now to do the breading, take out one strip at a time from the marinade and place it on the baking dish. Coat it evenly with the flour and take it out and place in the whisked egg. Coat it in the whisked egg and take it out and place it on the baking dish again to coat it well with the flour, to form layers of flour on the chicken strips.
– Repeat the same for all the strips and keep the breaded chicken strips on a plate.
Process:
– Take a flat skillet/deep pan and pour oil sufficient to deep fry the tenders. Heat the oil to medium hot.
– To bread the tenders take out the tenders one at a time and place on the egg wash. Coat it well and then place on the panko breadcrumbs. Bread it to evenly coat the tenders with Panko breadcrumbs. Arrange on a plate.
– Repeat the steps with the other tenders.
– Once the oil is medium hot, drop the tenders one at a time so as to not crowd the pan, say 4/5 in one batch.
– After around 2-3 mins once the tenders start floating on top, turn them over. Continue to fry them for 3 more minutes turning them few times till the tenders are golden brown color on all sides.
– Remove from oil and put the next batch. Repeat the process.
– Fry in batches of 4-5 strips each time.
