As I’m often asked how I go about my meal prep on a plant-based diet, I thought it was about time I answer the question! So I’ve brought you this 3 Bean Chilli recipe thats packed full of plant-based protein, vegetables and flavour! It’s never been so easy to become fully plant-based! ☺️

⬇️ THE RECIPE ⬇️

* 3 BEAN CHILLI *

1 tablespoon Olive Oil
1 Celery Stick (chopped)
1 Red Onion (diced)
1 Brown Onion (diced)
2 Garlic Cloves (finely chopped)
1 Red Chilli (de-seeded and finely chopped)
Salt & Freshly Ground Pepper

1 tablespoon Ground Cumin
1 tablespoon Paprika
1 tablespoon Smoked Paprika
1 teaspoon Vegetable Stock Mix
1 teaspoon Maple Syrup

2 Sprigs Rosemary
1 Sprig Thyme
3 teaspoons Tomato PurΓ©e

1 Can Chopped Tomatoes
400g Can Black Beans (drained)
400g Can Black-Eye Beans (drained)
200g Can Red Kidney Beans (drained)
100g Cherry Tomatoes
150g Fresh or Frozen Broccoli
50g Sweetcorn
200g Cooked Quinoa

1. Heat a large casserole dish on a medium-high heat and add the olive oil. Once hot enough add the celery and onions and fry for 5 minutes until slightly softened, before adding the garlic and chilli for a further 2-3 minutes and season well.

2. Add the remaining ingredients except for the fresh tomatoes, broccoli and sweetcorn and simmer gently for 20 minutes with the lid on, then for a further 20 minutes without the lid (if the ingredients are drying out, add additional hot water and extra salt and pepper each time).

3. With 5 minutes remaining add the cherry tomatoes, broccoli and sweetcorn (add the cooked couscous at this stage if using) then divide into equal containers.
