Best Indian Omelette Toast!

INGREDIENTS:

Makes 2 servings
– 4 Eggs
– 2 slices of Toast (Ezekiel Bread is a great option)
– 1/2 small Onion, finely chopped
– 1 Jalapeño, seeds removed if you want less heat
– 1/2 cup Cilantro, chopped
– Grass-fed Butter, melted
– 2 cloves of Garlic, minced
– 1 tsp Smoked Paprika
– Salt & Pepper to taste
– 3 tbsp Avocado Oil

INSTRUCTIONS:

1. In a mixing bowl, whisk together eggs. Combine onion, jalapeño, cilantro, smoked paprika and salt & pepper. Mix all ingredients well.
2. In a smaller bowl, melt 2 tbsp of butter. Combine the garlic.
3. Spread the garlic butter mixture on both sides of bread and toast for 1-2 min, or until slightly golden brown.
4. In a large pan, heat the avocado oil. Put the toast on the pan and spread the egg mixture over the top of the toast. Cook for about 1 min. Flip the toast. Pour the egg mixture on the other side and cook for about 1-2 min. Flip the toast again and cook for about 1-2 min.
5. Serve alone or with grated cheese on top and enjoy!
