THE BEST CREAMY SOUTHWESTERN RANCH DRESSING

Most vegan recipes use tofu, nuts or beans for creaminess. Those are certainly healthy options but I much prefer to find ways to use vegetables.

This dressing will make you fall in love with your salads again. Slightly sweet, slightly smoky with just a little bit of heat. It’s also delicious on sweet corn on the cob and over rice and beans. It’s a great way to sneak in vegetables and you don’t have to worry about portion control because the entire batch has fewer calories than 3 tablespoons of olive oil.

INGREDIENTS:

1-12 OUNCE BAG OF CAULIFLOWER, STEAMED AND CHILLED
4 OUNCES OF PITTED DATES
1/2 CUP LIME JUICE
1 CUP WATER
2 TEASPOONS SMOKED PAPRIKA (MUST BE SMOKED, NOT SWEET)
1/4 TEASPOON CHIPOTLE POWDER

BLEND ALL INGREDIENTS INA BLENDER UNTIL SMOOTH AND CREAMY. REGRIGERATE.
