Today I am sharing with you my favourite pasta recipe. It is full of good nutrients, low in calories but full of flavours! It is a great option for lunch and will keep you energised for long! You can prepare it before a busy week for the best possible start! The ingredients are below.
Ingredients for 4 portions
•• 500g butternut squash – 1 small squash
• 200g fusilli – cooked for 11min
• 240g chickpeas (you can use different pulses)
• 2 peppers
• 1 small onion
• 4-5 garlic cloves
• 50g spinach (1 cup)
• lemon juice – from ½ a lemon
• 30-40g pine nuts
• garlic powder
• chilli flakes
• salt, pepper, paprika & herbs
