An empanada is a common snack in Southern European, Latin American, Indonesian, and the Philippines cultures. The name comes from the Spanish empanar, which means wrapped or coated in bread. They are made by dough with filling, which may consist of meat, cheese, corn, or other ingredients. We can have them either by baking or frying. Both ways are delicious anyway!
Ingredients:
Pastry Dough
– 1 1/4 cup flour
– 110 gr cold unsalted butter
– 1/2 tsp salt
– 6 tbsp ice water
Empanada Filling
– 6 medium mushrooms, chopped
– 1/2 bell pepper, chopped
– 4 garlic cloves, chopped
– 1 shallot, chopped
– 1 medium carrot, grated
– 1 tbsp olive oil
– 2 tbsp soy sauce
– 2 tsp paprika powder
– 2 tsp coriander
– Fresh basil
– Black pepper
– Salt
– Grated cheese (optional)
– 1 beaten egg

Empanada terbuat dari kulit pastry dan isian, yang biasanya terbuat dari daging, jagung, keju dan lain-lain. Cemilan ini bisa dihidangkan dengan cara digoreng atau di panggang. Kedua cara tersebut pun akan menghasilkan Empanada yang nikmat!

Kulit Pastry
– 1 1/4 cup tepung
– 110 gr unsalted butter dingin
– 1/2 sdt garam
– 6 sdm air dingin
Isian Empanada
– 6 jamur ukuran sedang, dicincang
– 1/2 paprika merah, dicincang
– 4 siung bawang putih , dicincang
– 1 bawang merah, dicincang
– 1 wortel ukuran sedang, grated
– 1 sdm minyak zaitun
– 2 sdm kecap asin
– 2 sdt bubuk paprika
– 2 sdt ketumbar
– Daun kemangi
– Lada hitam
– Garam
– Keju parut (optional)
– 1 telur kocok
