Taking advantage of the fact that Paneer/Indian cheese is low carb and keto-friendly, I thought of making kabobs out of it. These are super scrumptious and would satisfy your savory food cravings. They are easy to make and quick to prepare. Don’t be scared of the yogurt, as low carb greek yogurt is being used. You can make the greek yogurt yourself by putting any yogurt in a muslin cloth and let all the whey drain out of it by hanging it. Draining out the whey makes it low in carb. Let’s get started.
Ingredients
For the kabob marinade
1 cup of greek yogurt/hung curd
7-8 mint leaves
1 tsp of freshly squeezed lemon juice
Salt as per your taste
½ tsp garlic powder
½ tsp red chili flakes
½ tsp Turmeric powder
½ tsp paprika/Kashmiri red chili powder
½ tsp dried oregano and dried basil/pizza seasoning
1 tbs oil for brushing
For the Dip
7-8 sprigs of Dill/Soya leaves chopped fine
1 tsp of lemon juice
2 tbsp of Mayonnaise/Vegenaise
1tbsp of olive oil/vegetable oil of your choice
½ tsp red chili flakes (optional)
Pinch of salt
Directions
1) Put the yogurt in a blender jar.
2) Add the mint leaves, lemon juice, salt
3) Blend to make a smooth paste.
4) Cut the paneer cubes 2 by 2 inches cubes.
5) Cut the red and green capsicum in cubes too.
6) Peel and cut the onions in cubes and take out the petals.
7) Pour the marinade on top of the vegetables and paneer.
8) Add garlic powder, chili flakes, turmeric powder, Paprika/Kashmiri Mirch powder( for color), and Dried oregano and basil leaves/Pizza seasoning.
9) Mix well and marinate for at least ½ an hour.
10) Soak some wooden skewers in water so that they do not burn when we put them on the grill.
11) Arrange the vegetables on the skewers ending with Paneer.
12) The skewer should not show through the Paneer as the kabob has to sit on it when we grill the skewers.
13) Oil a grilling pan and put it on medium heat.
14) Heat it up till it gets sizzling hot.
15) Put the skewers on the grilling pan and cook it till you see charred marks on it (that gives it a smoky taste)2-3 minutes on medium to high heat.
16) Cook on all sides. Serve them hot with the dipping sauce.
For the Dipping sauce chop, a few sprigs of Dill leaves/Soya leaves and put it in a bowl.
17) Add 1 tsp of lemon juice to it.
18) Next, add 2 tbsp of Mayonnaise/vegenaise
19) Then add 1tbsp of olive oil/vegetable oil
20) Then add ½ tsp of red chili flakes(optional)
21) Salt as needed
22) Mix everything together and you have a fantastic dip ready to go with the skewers.
Enjoy the skewers hot with the dip!!!!!!!
