Today we are taking this mash to another level, a breakfast for the gods.. here are my bacon, egg potato cakes.. Ingredients for this epic potato cake are listed below. This breakfast for the gods has a few elements and textures which make it such a wonderful way to start your day.

We are taking this mash to another level by giving it three separate textures. The base of our bacon, egg potato cakes get super crispy and charred, this creates a hash brown type bite. Then you get the toasted crunch from the outer crust which has developed under the grill/broiler and finally the soft super creamy inner potato which just takes this recipe over the edge of greatness. Hence why i refer to it as a breakfast for the Gods. So now that you’re aware of how we’re taking this mash to another level lets look at the other components.

Salty bacon, sweet crunchy peppers and silky egg oozing off the side to create an epic sauce. These final components are what complete our bacon, egg potato cakes and make this truly a breakfast for the gods.

Ingredients: (per serving)
1 potato mashed
3 rashes of bacon
1/2 cup of sweetcorn (i’m using canned and drained, you can use frozen once its defrosted)
1/2 a white onion
1/2 green bell pepper
pinch of salt and pepper
1/2 teaspoon smoked paprika
1 tbsp olive oil
1/2 cup cheddar cheese
1/4 cup Parmesan cheese
1 egg (per potato cake, this mixture will make 3 potato cakes, if cooking all three together you will require 3 eggs in total)
Fresh basil to garnish
