6 Minute Steak – Easy Skirt Steak Recipe

Diner in just 6 minutes! This delicious skirt steak recipe is easy to make and the marinade creates such a flavorful and juicy steak!

I used skirt steak but any thinner cut of beef like flat iron or flap steak works fine too. I do prefer a slightly thicker cut at least 1/2″ to 1″ inch because a super thin cut will cook very fast and I think those cuts work better for carne asada.

The marinade was actually adapted from a recipe for Carne Asada, you can leave out any flavors you don’t like – such as cilantro. But I find this combination is super flavorful and works really well with thinner cuts of meat.

Marinade – amount below is for 1 pound of meat – double amount if making more than one pound of steak.

1/4 cup olive oil
1/8 cup soy sauce
1 TBS. Balsamic Vinegar
1/4 cup fresh lime juice (please do not buy lime juice in plastic bottle)
1 tsp. Paprika or chili powder
1/2 tsp. ground cumin
2 garlic cloves – finely minced
1/4 cup fresh cilantro (coriander) roughly chopped
1/2 tsp. fresh ground black pepper
1/2 tsp. salt

Add all ingredients in a bowl – mix until well combined.
Pour marinade on top of meat and make sure to work it into the steaks – then pop into the fridge for 1 to 2 hours max. When marinating with any kind of citrus juice, its better not to marinate too long as citrus will actually cook the meat. So 1 to 2 hours max is best.

For pan frying beef cast iron is my preference – but any skillet or grill is fine.

Add a touch of olive oil to a hot pan – then and add steaks once pan is very hot – these steaks will cook fast! For very thin cuts of meat 2 minutes each side is good, for slightly thicker 3 minutes will result in medium rare to medium doneness. Cook according to your preference. I like to use a timer to make sure I don’t over cook them.

Helpful tips

Once steaks are done allow them to rest for at least 10 minutes – if you cut into a steak right away after cooking all the juice will run out. Don’t do this!

Make sure to cut against the grain, this way you’ll have tender pieces.

This steak is great on it’s own and paired with some simple sides like a salad – or you can make carne asada tacos or quesadillas.
