All the ingredients are approximate and they do not need to be exact just more or less is fine it wont make a massive difference.
Ingredients:
1/2 – 1 Kilo of ground pork
7 – 9 Guajillo or dried red Korean chili peppers
7 – 9 Garlic Cloves
1 Tablespoon of Apple Cider Vinegar
1 Tablespoon of White Distilled Vinegar
(Optional Bacon Fat / Pork Fat ) 1 – 2 Tablespoons
You can obtain pork fat or bacon fat aka lard by simply cooking bacon or pork meat and saving the fat that is produced after you cook the meat. Refrigerate the fat in a glass container after it cools. It will last a long time like a year or more.
1 Tablespoon Paprika
1 – 1 1/2 Tablespoons of Salt
1 Teaspoon Extra Virgin Olive Oil
1 Teaspoon Oregano
1 Teaspoon Cumin
1 Teaspoon Black Pepper
1 Teaspoon Thyme
(Optional) 1 Teaspoon dried chili flakes any kind
2 – 4 Clove’s (smashed)
Chili Water (Maybe 1/2 a cup or so)
