Here is my low calorie version of a crowd pleaser – Tacos! These are so so yummy! Hope you all enjoy it. Let me know in the comments if you try them and how you get on! 🙂

This recipe makes 4 portions.
Ingredients:
350g chicken breast
2tsp garlic granules
1tbsp smoked paprika
1tsp chilli powder
1tsp ground cumin
0.5tbsp olive oil
1 low sodium chicken stock cube
2 medium avocados (~270g)
6 firm tomatoes (~340g)
2 red onions (~160g)
2 green chillies
2 limes
1 aubergine
Cajun spice mix
Handful of coriander leaves
Mini tortilla wraps
Low fat creme fraiche
Low fat cheddar cheese
1. Chop the onions, tomatoes, coriander and chilli.
2. Add the spice mix to a sauce pain along with the chicken and a stock cube. Add enough boiling water to cover the chicken and cook for 30 mins. Check in 25 mins. If there is a lot of water in the saucepan, take the lid off and boil on high for the last 5 mins to make the sauce thicker.
3. Cut the aubergine into thin slices, season and fry. I used some cajun spice and salt to season it.
4. Combine the avocado, 50g each of onion and tomatoes, some coriander and chilli and the juice of a lime. Add 1/4 tsp of garlic granules and salt and mix.
5. Combine the remaining onion, tomatoes, coriander, chilli with the juice of a lime, 1/4 tsp garlic granules and salt.
6. Toast 1.5 mini tortilla wraps (per portion) cut in half in the toaster at the lowest setting.
7. Assemble: portion out the guacamole, salsa and chicken and enjoy with 20g of sour cream and 20g of cheese!
Each portion contains 529 calories (35g of protein, 41g of carbohydrates and 25g of fat).
