Chef Caleb shows us one of his favorite twists on a classic recipe: chicken salad. This recipe uses the Persian Gold Seasoning and is easy to make.
Persian Gold Chicken Salad
Servings: 3-4
Prep time: 15 minutes
Cook Time: 45 minutes
2 chicken breasts, boneless skinless
Olive or pecan oil
Salt
Pepper
Β½ onion, fine dice
2 green onions, thin sliced
Β½ cup tomatoes, diced
ΒΌ bunch cilantro, chopped
2 tsp. garlic, minced
1 lime, juiced
1 bell pepper, diced
1 jalapeno, fine diced(opt.)
2 Tbsp. Persian Gold Seasoning (https://colonelde.com/shop/blends/asian/persian-gold/)
1 tsp. kosher salt
1/3 cup mayo or Greek yogurt
1. Preheat oven to 350*F.
2. Place chicken in an oven-safe dish. Coat in olive oil. Season with salt and pepper. Bake uncovered 45-50 minutes or until chicken reaches an internal temperature of 165*F.
3. Allow chicken to cool before dicing.
4. Mix remaining ingredients with chicken in a large mixing bowl. Adjust seasoning as needed. Serve Β½ cup chicken salad chilled on bed of greens of choice or on flat bread for a sandwich.
