Here are the ingredient:
1/4 cup of white sugar
1/4 cup of brown sugar
2 1/2 tablespoons of sea salt
2 1/2 tablespoons of chili powder
1 tablespoon of garlic powder
1 tablespoon of onion powder
1 tablespoon of smoked paprika
1 tablespoon of black pepper freshly ground, if possible
1 1/2 teaspoon of thyme
1 1/2 teaspoon of dried rosemary or 1 1/2 tablespoons fresh rosemary
1 1/2 teaspoon of cumin
1/2 teaspoon of all spice
1/2 teaspoon of coriander
1/2 teaspoon of nutmeg
1/4 teaspoon of cayenne pepper
INSTRUCTIONS
Step 1. Combine all ingredients and whir in a spice grinder or blender until smooth. Store in a sealed container at room temperature up to a year.
Step 2. To use, brush meat with oil on both sides. Rub generously with spice blend.
Wrap meat in aluminum foil and refrigerate for 8 hours to overnight. Grill or bake as desired.
