Vegan and gluten free deviled potatoes couldn’t be easier. Get ready for compliments. Here’s the recipe :
Ingredients
* 12 Mini Yellow-Fleshed Potatoes (approx. egg sized, if you can find them)
* 1/4 cup Vegan Mayonnaise
* 1 tbsp Mustard (I used Dijon)
* 1 tbsp Plant Milk
* Salt & Pepper, to taste
* 1/4 tsp Paprika (plus more for garnish)
* 1 tbsp dried or fresh Chives (plus more for garnish)
Steps
1. Boil a large pot of salted water and cook your potatoes until cooked through, approximately 10-15 minutes.
2. Slice off the top 1/3 of the potato, and carefully spoon out the center, making a small well. Place the insides into a separate bowl – leaving some of the potato still in its skin as to keep the potato still intact. (I used a grapefruit spoon but you can use a teaspoon or small knife) Place the potato shells aside.
3. In a mixing bowl, mash the potato flesh while combining with mustard, vegan mayo, salt, pepper, paprika, chives & plant milk.
4. Use a small teaspoon to put the mixture back into the potato skin shells, and garnish the tops with additional paprika and chives.
5. Serve warm or at room temperature.
