This is an easy and delicious way to enjoy two of the most nutritious foods, sweet potatoes (or yams if you prefer) and kale. It might sound strange at first but it is great. The ingredients are: 2 baked yams or sweet potatoes, half an onion chopped, a little salt and Hungarian paprika (the mild one) a few leaves of kale and a can of great northern beans (about 2 cups) with the liquid. First bake the yams/sweet potatoes until they are tender (this can be done the day before) then place all ingredients in a large skillet and on medium low heat cook them until the onions and kale are tender (about 5 minutes). This with some home baked bread makes a delicious lunch. Yummm.
