Best Shakshuka Recipe – Middle Eastern Baked Eggs – perfect breakfast/brunch that you can easily make to impress your family and friends 🙂

Ingredients:

4-5 tbsp olive oil
1 onion, diced
2 cloves of garlic, finelly chopped
2 red bell peppers, diced
1 tsp salt
1/2 tsp black pepper
1/2 tsp cumin
1 tsp sweet paprika
1 can (28 oz) of diced tomatoes with their juice
1 tbsp sugar
3.5 oz (100 g) feta cheese, crumbled
5-6 eggs
some feta and parsley for decoration

Heat olive oil on medioum heat.
Add onion and cook for 2 minutes.
Add bell peppers and garlic, cook for 3-4 minutes then add spices. Stir for few seconds then add tomatoes.
Cook for about 10 minutes stirring from time to time.
Stir in sugar.
If your pan is not oven proof, transfer vegetables to an oven proof pan and stir in crumbled feta cheese.
Preheat oven (with fan) to 375 F (190 C).
Crack the eggs over the vegetables.
Bake in preheated oven for about 15-20 minutes or until the yolks have reached the desired texture. Don’t overbake because eggs will become rubbery.

Sprinkle with crumbled feta and some parsley (optional).
