Learn how to make an easy recipe for a meatless chili con carne. We soak and cook the beans ourselves giving a much better result than with pre-cooked, canned beans. The tender bell peppers are a great substitute for meat!
Ingredients for 4 people:
250 gr / 8.5 oz black beans (or kidney, pinto, black eyed…)
2 (red) bell peppers
1 yellow onion
2 cloves fresh garlic
1 fresh chili (strength as you wish)
1 tbsp tomato puree
1 tsp dried chili powder
1 tsp smoked paprika
1 tsp cumin powder
1 tsp oregano
0.5 liter of vegetable stock
1 can (450 gr) chopped tomatoes (can be drained for less liquid)
neutral tasting oil for frying (canola or grapeseed…)
salt and pepper
Serve over rice with sour cream and fresh cilantro
