Guacamole with Baked Crispy Tortillas/Nachos
Guacamole:-
2 large Avocado
1 onion peeled and finely chopped
2 medium tomatoes finely chopped
1/2 cup chopped cilantro/coriander leaves
1 tbsp chopped pickled jalapenos or fresh jalapeno or bird chilli
1tsp minced garlic
1-2 tbsp lemon juice
Salt and pepper to taste
Cut avocados to half & remove stone. Take out the flesh, transfer to a deep bowl and mash well. Add chopped onion, tomato, cilantro, jalapenos, minced garlic, lemon juice, salt and pepper. Combine well and set aside.
Crispy Tortillas:-
4-6 Tortillas – whole wheat or any
Paprika as required
Salt as required
Extra virgin olive oil as required
Take a tortilla, brush with little olive oil, then sprinkle with paprika and salt all over the tortilla. Top with another tortilla and brush with olive oil then sprinkle with paprika and salt. Repeat the process with the remaining tortillas. Then cut tortilla stack to triangles (halve, halve, and halve again).
Preheat oven to 200C
Place the tortillas on a lined, greased baking tray and bake for about 5 mins or until golden and crispy
