As I work here I need to do some salad’s to serve and not relying always with some cookbooks.
I do more often to do and experiment salad’s with my own.
I learned to make this simple recipes that surely you will loved if you are a sweet potato salad, potato salad and baked potato lover.
NOTE: Before we do our salad make sure to wash properly our vegetables especially if we are using root crops and baking them together with the skin.
SWEET POTATO SALAD WITH CHICKPEAS
INGREDIENTS;
3 large sweet potato
200g cooked chickpeas
1 medium onion
1 cup of rocket leaves
a handful parsley
a handful of coriander
MIXTURE;
4 cloves of garlic (crushed)
1 tbsp. ground cinnamon
2 tbsp. ground cumin
salt & pepper to taste
4 tbsp. olive oil
juice of 1 lemon
1 tbsp. paprika
DRESSING;
3 tbsp. olive oil
1/2 tsp. paprika
1/2 juice of lemon
salt
PROCEDURE:
~Wash all the vegetables properly.
~Cut the sweet potato into bite sized leaving the skin on.
~Sliced the onion.
~Drained the chickpeas.
~Arrange on the tray the chickpeas, onion and sweet potato.
~Mix all the mixture to coat sweet potato and chickpeas on the tray leaving the onion plain.
~Bake them for an about 20-30 mins. at 160 degree celsius and checking them not to burn especially the onion.
~Leave them to cool down when it’s cool before adding to green leaves.
~Put on the salad bowl our rocket leaves, parsley & coriander along with our dressing.
~Put on top the baked sweet potao, onion and chickpeas.
~Serve and enjoy your salad!
BAKED POTATO
INGREDIENTS;
3 medium potato
2 tbsp. coriander powder
1 tsp. ground cumin
2 tbsp. olive oil
1 tsp. paprika
salt & pepper to taste
PROCEDURE:
~Wash properly our potato and cut into wedges leaving the skin on.
~Put on a baking tray.
~Mix all together with the olive oil, ground cumin, paprika, coriander powder, salt & pepper to taste.
~Bake or an about 20 mins. at 180 degree celsius.
~Serve and enjoy the aroma of mixed spices.
POTATO SALAD WITH CAPERS
INGREDIENTS;
3 medium potato
bunch of lettuce
1 green onion
1 tbsp. capers
2 tbsp. olive oil
pitted olives
salt & pepper
BALSAMIC DRESSING;
2 tbsp. balsamic vinegar
3 tbsp. olive oil
salt & pepper to taste
PROCEDURE:
~Wash properly our vegetables.
~Cut the potato into bite size leaving the skin on.
~Put in a baking tray seasoned with salt & pepper and drizzle some olive oil.
~Bake for an about 20 mins. at 180 degree celsius.
~Leave it to cool down when it’s done.
~Roughly chop the green onion and lettuce.
~Cut into half our pitted olives.
~Put all the lettuce, pitted olives, potato, capers and green onion.
~Serve with balsamic dressing.
~Enjoy your salad!
