Ingredient recap:

BLUEBERRY BANANA MUFFINS
300g self raising flour
1 Tsp bicarbonate/baking soda
3 mashed bananas
150g fresh blueberries/dried blueberries
60 mls oil (5 tbsps)
soya buttermilk (285 mls soya milk + 2tbsps apple cider vinegar)
1 Tsp vanilla
120g light brown sugar

HUMMUS
2 cans chickpeas plus water from 1
3 cloves garlic
Juice of 3 lemons
4 tbsps extra virgin olive oil
1 Tsp salt plus extra if needed
180 mls tahini

For half spiced
3/4 tsp ground cumin
1/4 tsp ground coriander
3/4 tsp paprika
1/4 tsp ground cinnamon
1/4 tsp turmeric

SALAD DRESSING for 125g bag of salad
3 tbsps extra virgin olive oil
2 tbsps balsamic vinegar
Salt and pepper to taste
1/2 tsp garlic and herb powder
2 heaped tbsps chopped shallots

GUACAMOLE
6 avocados mashed
Juice of 2 limes
Salt and pepper to taste
1 1/2 grated cloves garlic
1 handful chopped fresh coriander
1/4 large shallot chopped

TOMATO SALSA
6 tomatoes (large vine)
1 onion
3 tbsps white wine vinegar
Juice of 2 limes
2 handfuls coriander
5 birds eye chillis (or according to taste)
Salt to taste
3 cloves garlic

BLACK BEANS
500g dried black beans (soaked overnight in a Tsp of baking powder)
2 stalks celery
2 green peppers
4 garlic cloves grated
3 heaped tsps ground cumin
3 heaped tsps smoked paprika
Salt to taste
1 Tsp bicarbonate/ baking soda

After sautΓ©ing veg, beans and adding hot water, simmer with an open lid for an hour. Stir occasionally to prevent sticking. Canned beans take a shorter time but still add the baking soda.
