The RECIPE of the WEEK is Spatchcock Chicken. Spatchcock chicken is a cooking technique that decreases the cooking time. This technique will save you time in the kitchen and the whole chicken will provide you with multiple meal possibilities. You can use it in any recipe that calls for pre-cooked chicken.

To make spatchcock chicken…
Cut backbone out
Flip over and break the breast bone.
In an iron skillet, pour a little cooking oil, chicken broth, and add a smashed garlic clove. Place chicken on top with breast bone up.
Mix about 2 TBSP of softened butter and whichever seasonings that you prefer together. Then put some under the skin and rub on top of the skin. Sprinkle with a few more spices on top.
Roast on 450 degrees for 45 minutes – 1 hour.
Check the temperature to ensure that it is 165 degrees.
Let rest on the counter for 10 minutes.

3 TBSP Coarse Salt
3 TBSP Paprika
2 TBSP Black Pepper
1 TBSP Garlic Powder
1 TBSP Onion Powder
1 TBSP Dried Thyme
Mix together.
