Here’s another mouth watering simple duck dinner recipe that you must try. Easy, simple, delicious and most importantly very healthy. Check out the full recipe below๐ ENJOY!
DUCK GREEK SALAD WITH HERB NEW POTATOES
250g Duck breast
50g New potatoes(baby potatoes) Cut into halves
Butter 2tsp
Thyme (according to your taste)
Smoked paprika(according to your taste)
Salt & Pepper
Mixed Green salad
Rocket leaves
Cherry tomatoes 30g (cut into halves)
Snack cucumbers 3pcs (cut into quarters)
Mixed radishh 30g ( thinly sliced)
Feta Cheese 100g ( cubed)
Lemon juice 1Tbsp
Olive oil 2tsp
Dried Parsley 1tsp(according to your taste)
TIPS๐
-Preheat your oven to 200C before you start searing the duck
– Cook duck in a COLD pan and no OIL, then gradually turn up the heat to render the fat properly. If you start with high heat the fat will not be rendered, the duck will burn and will result to either undercook or overcook
– Always cook the duck skin upside down.
– Reserve the ducks fat in the pan. It’s always good if you want to cook potatoes (as what I did) and other side dish to complement the duck dish as it adds more flavour.
– If your using a plastic handle pan, transfer the duck into a pan pre-heated in the oven.
– Most importantly is to REST duck. Do not slice the duck while it’s still hot as it will result to bleed and will dry the meat.
