Smoked Potato Salad with Bacon and Bleu Cheese
Our smoked potato salad is a great summer dish that is simple to make, however, you can make this delicious salad any time of the year.
Ingredients:
6 each- medium Yukon Gold potatoes, peeled and cut in half
1/2- medium red onion, fine diced
3 each- celery ribs, fine diced
1 bunch- fine chopped green onions
6 each- hard boiled eggs, sliced
1 lb- bacon, sliced and rendered
1 each- quarter wedge bleu cheese, or about 4 oz. Sliced or crumbled
1 1/2 cup- mayonnaise
2 TBSP- dijon mustard
1/4 cup- white wine vinegar
1 TBSP- minced garlic
1 TBSP- smoked paprika
1/3 cup- half and half or whole milk
Salt and pepper as needed
Method:
Smoke the potatoes at about 125-150 for about 2 hours, we used hickory and it turned out great.
Add the red onions, green onions, celery, blue cheese, mayo, dijon, vinegar, garlic, paprika and half and half to a mixing bowl, combine and refrigerate for several hours.
Render the bacon in a large pot and cook until crispy.
Cook hard boiled eggs and let cool, then slice.
After the potatoes have smoked and cooled, slice into desired size and add to the bleu cheese mixture.
Add bacon and eggs, combine and refrigerate for 2 hours before serving.
Notes:
Save some pieces of bacon, bleu cheese and green onions for garnish.
Make sure your smoker is hot enough to get good smoke, you may have to increase temperature at first to get a good smoke, then reduce.
