Quail marination :
1 teaspoon corn or vegetable oil
smoked paprika
Orange
rosemary
2 tablespoons honey
2 tablespoons soy sauce
1 clove garlic
½ teaspoon freshly groud black pepper
ginger , peeled and finely chopped
salt

Potato puree
250g mash potatoes
100g of unsalted butter
75 ml cream
20 of milk
salt

Steamed green beans

Rosted potato
Steamed green beans & spring onion

Beetroot lace Tuile
¾ ounces water
1 tablespoon beetroot puree
1/3 ounce vegetable oil
1 ounce flour
salt

Calendula , sage
