In this video, we show you a Coconut Grilled Chicken Recipe, which is also known as Kuku Paka in East Africa. This Coconut Grilled Chicken Recipe is absolutely delicious with a beautiful mix of flavours. Swahili cuisine is a mix of East African flavours infused with ingredients from the Subcontinent and Arab influence, and this Kuku Paka (coconut chicken) is the perfect example of fusion food. Kuku Paka is very popular in Kenya and Tanzania and is absolutely delicious, especially when the chicken has been cooked on the BBQ!
For the Coconut Grilled Chicken Recipe, you will need:
1 Full chicken cut into 4 pieces
salt to taste
1 tsp garlic powder
juice of half lime
Coat the chicken with the above and leave aside for 10 minutes, to remove any chicken odour.
For the Kuku Paka chicken marinade:
2 tbs oil
1 tsp cumin powder
salt to taste
1 tsp coriander powder
1/2 tsp black pepper
1/4 tsp turmeric powder
1/2 tsp chili powder
1/2 tsp paprika
1 tsp crushed ginger
1/2 tsp crushed garlic
juice of half a lime
marinate the chicken for 2 – 6 hours (or overnight for best results)
To make the Coconut Sauce for the Kuku Paka:
2 tbs oil
2 grated garlic cloves
1/2 onion diced
3 small tomatoes diced
salt to taste
1/2 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp paprika
1 tbs tomato puree
1 tin coconut milk (400ml)
1-2 green / red chilies
juice of half a lime
The Chicken is best cooked on the BBQ, but due to the weather we half cooked it in the oven and then finished it off on the grill pan to get that char-grilled effect. We also added a piece of coal to some oil for the BBQ flavour. Garnish the Coconut grilled chicken with fresh coriander and lemon slices. You can serve the kuku paka coconut chicken with chips, roti, naan, rice or salad.
