Polenta Pie Recipe:
400g Polenta
1 Tin of sweet corn
2 x Medium Onions
Mushrooms
Sun-dried tomatoes
Tomato relish
Topping for the Polenta Pie:
Vegan cheese
Slow roasted tomatoes
Fresh basil
Fried aubergine
Seasoning:
Onion salt
Pepper
Soy sauce
Date syrup
Oregano
Garlic
Smoked paprika
Hi Guys,
This recipe is a nod to my family back home in South Africa.
I based it on our family traditional family meals, good hearty food that we would enjoy with barbecues as it’s the summertime there!
We had it with a delicious salad that I made a new dressing for, and I will share that with you soon!
