Whole Food, Plant-Based RECIPES As Shown –
Veggie Spring Rolls with Almond Sauce
12″ rice paper sheets
1 English cucumber
1 large carrot
Marinated tofu
cooked rice noodles or rice (optional)
Avocado
Shredded lettuce or cabbage
Thai basil or mint
2 tbsp almond butter
2 tbsp maple syrup
1 tbsp coconut aminos or soy sauce
1 tbsp sriracha or chili sauce
1 tsp rice vinegar
1 tsp ground ginger
1. Julienne your cucumber and carrot into long strips and cut the strips in half.
2. Shred your lettuce and prepare any of your other fillings.
3. Place rice paper under the kitchen faucet and run water over it until all the sides are wet. Then place on a flat surface and fill with your veggies. Leave 2 inches of space around the sides. Once the paper is soft, roll it up like a burrito tucking in the sides and rolling it up.
4. Mix your sauce ingredients together in a small bowl to dip veggie rolls in and enjoy!
Penne Pesto (Rawsome Vegan Cookbook)
– 1 Dry Pint grape tomatoes
– 2 cups uncooked whole grain, gluten-free penne
– 2 cups lightly packed basil leaves, +1 cup lightly packed basil leaves for topping (optional)
– 1/4 cup water, as needed
– 1/2 cup pine nuts
– 1/4 tsp. himalayan salt
– 1 garlic clove
1. Preheat the oven to 350 F. Cut all the tomatoes in half and bake for 15-20 minutes or until they are bubbling and slightly wrinkled.
2. Cook the pasta according to the package directions.
3. Make the pesto: blend all the ingredients, except water, until you reach the desired consistency. Add water as needed + more salt if you want.
4. Toss the pesto with the penne and the remaining cup of basil and serve with the roasted tomatoes.
Tomato Soup Recipe (HCH)
1 28oz can diced tomatoes
1/2 yellow onion, chopped
4 garlic cloves, minced
1 Tbsp Better than bouillon veggie
1 cup water
4 tbsp cashew butter*
1 tbsp maple syrup
1 tbsp italian seasoning
1 tbsp dried basil
1/2 tsp ground cayenne (optional)
2 carrots, chopped
1 medium zucchini, chopped
1. Place a saucepan over medium heat and add a few tablespoons of water or coconut oil to the pan. Add in your minced garlic and onions and saute for 5 minutes.
2. Add in the rest of your ingredients (except the nut butter) and bring to a boil. Once boiling reduce the heat to a simmer, cover and cook for 15 minutes.
3. When the soup is done, add in your cashew butter and blend with an with a blender or immersion blender. Serve with a little fresh basil on top.
*you can also sub 1/2 cup full fat coconut milk or any other nut source for the cashew butter.
Broccoli Hashbrown Recipe (HCH)
1 bag (5 cups) frozen hashbrowns
4 cups chopped broccoli (frozen or fresh)
2 small potatoes, chopped
1/4 yellow or red onion, chopped
2 cloves garlic
1 medium carrot, chopped
2 tbsp miso
juice 1/2 lemon OR 2 Tbsp. apple cider vinegar
1/4 tsp salt
1/4 tsp smoked paprika
1/4 tsp cayenne (optional)
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1/2 cup nutritional yeast
2 cups water
1. For the cheese sauce – In a saucepan bring 2 cups of water to a boil and add in your potatoes, carrot, onion and garlic. Reduce heat to a simmer, cover and cook 10 minutes or until soft. You can also throw these ingredients into your instant pot on sealed, high pressure for 8 minutes and release it when its done. Add your cooked veggies and water slowly (use the cooking water) into a high speed blender. Then add in the rest of your ingredients. Blend on high for 1 minute. (Only add in the cooking water slowly until you get the desired consistency, no extra water).
2. Preheat oven to 400 degrees and grab a 9×9 baking pan. Add half the potato cheese sauce and stir it together, then add the mix into the baking pan and top with the rest of the cheese.
3. Cook uncovered for 40 minutes in the oven. You can also broil this at the end to get the top nice and caramelized. ENJOY!
