5 DINNER RECIPES | QUICK AND EASY MEAL IDEAS ON A BUDGET | VEGETARIAN

Hey guys!

I hope you are all doing well. Welcome back to my channel. I am so happy to be bringing back another 5 recipe ideas. These recipes are super easy, quick and most importantly, SO TASTY!

RECIPES:

BLACK BEAN TACOS:
– 1 can of black beans
– 1 avocado
– 1 red onion
– 1 green chilli
– 1 green pepper
– 1 yellow pepper
– 2tsp cajun spice mix
– 1tsp smoked paprika
– 2 handfuls of coriander
– 2 garlic cloves
– 1tsp chilli flakes
– 2 limes
– 1tbsp tomato pureè
– 10 taco shells

RED LENTIL SPAGHETTI BOLOGNAISE:
– 2 onions, finely chopped
– 3 carrots, finely chopped
– 3 celery sticks, finely chopped
– 3 garlic cloves, crushed
– 500g bag dried red lentils
– x2 cans chopped tomatoes
– 2 tbsp tomato purée
– 2 tsp each dried oregano and thyme
– 3 bay leaves
– 1l vegetable stock
– 500g spaghetti
– parmesan or vegetarian cheese, grated, to serve

PIZZA RECIPE:
– x2 pre-made pizza dough
– 4 tbsp passata
– 1 red onion
– 1 yellow bell pepper
– 2tbsp olive oil
– 200g chestnut mushrooms
– 2 cloves of garlic
– 8 basil leaves
– 1 ball of mozzorella
– 2tsp dried Italian herbs

SWEET POTATO AND HARISSA CAKES:
– 4 eggs
– 200g sweetcorn
– 500g sweet potato, peeled and grated
– 200g gluten-free flour (can be normal)
– 1 small pack parsley or coriander, chopped
– 4 egg whites
– 50g harissa
olive oil, for frying

CURRY PIE:
– 2 tbsp sunflower oil
– 1 onion , finely chopped
– 2 garlic cloves , chopped
– 3 tbsp curry paste
– 1 green chilli , deseeded and finely chopped
– 1 tbsp garam masala
– 1 tsp ground turmeric and ground cumin
– 2 carrots , cubed
– 225g cauliflower florets
– 1 courgette , cubed
– 75g frozen peas
– 100g sweetcorn
– 3 tbsp chopped fresh coriander
– 1 pack of puff pastry
