INGREDIENTS
1 SERVING
3 tbsp almond flour (you can substitute 1 tbsp plus 1 tsp coconut flour, if you prefer)
1 large egg
1 tbsp melted coconut oil (substitute butter, ghee, olive or avocado oil)
1/2 tsp baking powder
Pinch of salt
INSTRUCTIONS
1 Combine all ingredients in a microwave-safe bowl or rimmed dish.
2 Make sure to remove any air bubbles by tapping the dish/bowl gently a few times on the countertop.
3 Microwave for 90 seconds.
4 Eat plain or serve with your favorite nut butter, cheese, grass-fed butter or cream cheese

Roast Beef, Cheese, Avocado and Strawberries
INGREDIENTS
1 SERVING
3 slices deli roast beef
1 oz cheddar cheese
1/2 avocado, sliced
4 strawberries, sliced
Optional:
Lettuce wraps, mayo, mustard, or hot sauce
INSTRUCTIONS Arrange all ingredients in a sectioned lunch container or on a plate.
Serve roast beef and cheese in lettuce wraps with a bit of mayo, mustard, or hot sauce, if you like.

Almonds
INGREDIENTS
1/4 cup almonds

Dinner
Creamy Spinach Parmesan Stuffed Chicken
INGREDIENTS
4 SERVINGS
4 chicken breasts (4-6 oz each)
1 tbsp olive oil or avocado oil
1 tsp paprika
1 tsp salt, divided
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 cup grated parmesan
4 oz cream cheese, softened
2 tbsp mayonnaise
1 & 1/2 cups chopped fresh spinach
1 tsp garlic, minced
1/2 tsp red pepper flakes
INSTRUCTIONS
Begin by preheating an oven to 375° F.
Next, mix the paprika, ½ tsp of salt, garlic powder, and onion powder in a small bowl and set aside.
Now, drizzle chicken with oil and rub with seasoning mix.
Use a knife to cut a slit in each chicken breast for the filling.
Next, begin creating your filling by combining the cream cheese, parmesan, mayo, spinach, garlic, red pepper, and remaining salt. Stir well to incorporate ingredients fully.
Now, fill your chicken breasts with the creamed spinach mixture.
Place chicken breasts on a baking tray or dish sprayed with nonstick spray.
Cook about 25 minutes or until chicken is no longer pink.
