3 QUICK, EASY & CHEAP LUNCH RECIPES | PERFECT FOR LEFT OVERS | VEGETARIAN
Hey guys!
I hope you are all doing well. Welcome back to my channel and to a food video. It feels like it has been so long since my last one so I thought it would be a good idea to create some lunch recipes now people are going back to work/offices etc.

RECIPES:
Easy Pasta Salad:
250g fusili pasta
1/2 red onion
1/4 cucumber, de-seeded
1/4 red, green and orange pepper
1/2 can sweetcorn, drained
8 cherry tomatoes, quartered
2tbsp light mayonaise
1tbsp garlic mayonaise
1tsp onion salt powder
80g feta, crumbled
Three Bean Chilli:
1/2 red onion, diced
2 garlic cloves, grated
1/2 red chilli, chopped
1/4 red, green and orange pepper
1 can of kidney beans in chilli sauce
1 can of mixed beans in tomato sauce
1tsp cayenne pepper
2tsp smoked paprika
1tsp chilli flakes
1/2 can drained sweetcorn
200ml cold water
handful of chopped coriander
TO SERVE:
Mexican Rice
Sour cream
Plain tortilla chips
Jalapeños
Hummus & Pepper Wraps:
1 can of chickpeas with 2-3tbsp of the juice
1/2 lemon
2 garlic cloves
pinch of rock salt
2tbsp olive oil
1/4 red, green and orange peppers
1/2 chopped chilli
40g crumbled feta
2-4 tortilla wraps
lettuce or mixed salad
