Baked Paprika Chicken Thighs

• 6 Chicken thighs
• 10g Sweet Paprika
• 5g Hot Paprika
• 60g White Wine
• 40g Extra Virgin Olive Oil
• 15g Fine Salt
• Ground Black Pepper, to taste


1. Start by preparing the marinade for the chicken. In a large bowl, combine sweet and hot paprika, white wine, extra virgin olive oil, salt, and freshly ground black pepper.
2. Add the chicken thighs to the bowl and mix well, ensuring that each piece is fully coated with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 2 hours. For the best flavor, you can marinate it overnight.
3. Preheat your oven to 180°C (350°F).
4. Arrange the marinated chicken thighs on a baking tray, leaving some space between each piece to ensure they cook evenly. Pour the remaining marinade over the chicken.
5. Bake in the preheated oven for approximately 45 minutes, or until the chicken is well cooked and the skin is crispy. Halfway through the baking, you can baste the chicken with the juices collected in the tray for extra flavor and moisture.
6. Once done, let the chicken rest for a few minutes before serving.
