I love being able to prep some things for the week that just make the week go by a little smoother. I try and switch it up each week so we don’t get burnt out on anything. What are some staples you keep in your kitchen to eat throughout the week? 🥗

Cowboy caviar- this is my sister in law’s recipe, not mine!!
What you’ll need:
* 3 can black eye peas (I used chick peas too and they were great in it!)
* 1 can black beans
* 2 cans corn
* 1 bell pepper
* 1 red onion
* 1 can green chiles (I realize I forgot these)
* 1 can diced tomatoes
* Italian dressing

1. Rinse all beans and tomatoes, put in large bowl
2. Chop up onions and bell pepper into small pieces & add them in
3. Add remaining ingredients (including Italian dressing)
4. Mix together and let sit in fridge overnight
5. We love to enjoy these with scoop tortilla chips

Egg salad : this recipe changes almost each time I make it depending on what I have in the fridge that need to be used up.

What you’ll need:
* 6-12 eggs(depending on how much salad you need)
* 1-2 pickles and/or pickle juice
* Dried or fresh dill
* Mayo
* Yellow mustard
* Salt
* Pepper
* Paprika
* Garlic powder
* Onion

1. Boil eggs, add to ice bath and remove shells
2. Cut eggs and put yolks in separate bowl for later
3. Chop onions and pickles into small pieces.
4. Get the bowl of yolks, add mustard, mayo, dill, salt, paprika, pepper and garlic powder and mix to desired consistency. Set aside.
5. Chop egg whites into small pieces add to bowl along with onion and pickle
6. Add yolk mix in now and mix all together.
7. Enjoy on sandwich or with crackers!
