Garlic and Paprika Mayo! Super delicious, light and fluffy, takes seconds, once I started making my own mayo I never went back. Pro tip for this one, get a good imported paprika, does not need to be expensive, this particular brand is from Serbia and works great.

Ingredients:
• 1 cup, avocado oil
• 1 large egg
• 2 garlic cloves, smashed and roughly chopped
• 1 tbsp lemon juice
• 1 tbsp dijon mustard
• 3-4 tbsp sweet balkan paprika
• salt
Steps:
• Combine all of the ingredients into a narrow vessel like a malt cup. Place the head of an immersion blender to the base of the vessel and begin to pulse on high, slowly raise the blender, emulsifying the oils and blending as it raises. By the time it reaches the top of the mixture you should have a thick mayo.
