Main Ingredients:
2 aubergines cut into slices
1 green pepper sliced
1 red pepper sliced
3 tomatoes sliced
1 white onion sliced
400 g of tofu sliced
Sauce Ingredients:
1/2 cup of Olive oil
1 tsp of garlic powder
1/2 tsp of sweet paprika 1/8 of a teaspoon of black pepper
1/8 of a teaspoon of white pepper
1 tsp dried oregano
1 tsp dried parsley
1/2 tsp dried thyme
1 teaspoon sea salt
Yoghurt Dressing Ingredients:
400g non-GMO soya yogurt
1 tsp cumin powder
1/4 tsp sea salt
1 tsp garlic powder
To serve:
Wholegrain buns
Yoghurt dressing
Fresh coriander
Preparation:
1. Slice the vegetables and tofu and preheat the oven.
2. Make up the dressing and mix together the sauce ingredients.
3. Add the sauce to the sliced vegetables and tofu.
4. Place this in a baking tray.
5. Cook in a preheated oven a 180°C for 20 to 30 minutes
6. Serve in the wholegrain buns together with the yoghurt dressing and fresh coriander. Enjoy 😉😀
