30 Minute Dinner: Smoked Paprika Hash w/ Ground Sirloin
I meant to call this one “Cheesy Smoked Paprika Hash” but I forgot to add cheese. It was still great and quick to make. For me, the combo of the smoked paprika flavor and the sour cream/lime is the best part.
Ingredients/Cost:
3/4 lb ground sirloin: $5.25
1 large potato: $1.70
1 green bell pepper: $1.45
1 tomato: $1.20
1/2 white onion: $0.55
2 eggs: $0.90
1/2 lime: $0.40
5 tbsp sour cream: $0.45
2 tbsp butter: $0.40
1 tbsp oil: $0.35
Spices (salt/pepper/garlic powder/oregano/smoked paprika): $0.55
Total cost = $13.20 or $6.60 per serving
Directions (est. time ~30 minutes, serves 2):
1. Dice the pepper, tomato and onion and cut the potato into small cubes. Mix the sour cream and lime juice together.
2. Put a pan on the stove over medium-high heat and add 1 tbsp oil. Add the potatoes and cook for ~3 minutes until the first side browns. Season with some salt/pepper/garlic powder/oregano/smoked paprika and then toss the potatoes so they cook evenly. Cook for another ~1 minute. While the potatoes cook, put another pan on the stove over medium heat and add 2 tsp butter and the ground beef. Season with the same seasoning mixture and cook, mixing and breaking up occasionally, until done (~7-8 minutes).
3. Push the potatoes to one side of the pan and add onions to the other side. Season the onions with some of the same seasoning mixture and then add 2 tsp of butter to the pan and toss to mix the potatoes and onions. Cook for ~3 minutes until the onions soften.
4. Add the diced green bell pepper to the pan and toss to mix, then cook for ~3 minutes. Add the diced tomato and a little more seasoning mixture, toss and cook for ~1-2 minutes.
5. Combine the ground beef and veggie mixture into one pan, take off the heat and mix to combine. Put a small nonstick pan on the stove over medium heat and add 2 tsp butter. Add the two eggs and cook them sunny side up. Serve the eggs on top of the hash and then drizzle the lime/sour cream mixture over the top.
