Hummus and Tomato Toast
Sourdough bread toasted in a grill skillet then topped with homemade hummus (recipe below), then drizzled with super fresh and high quality olio nuovo, sprinkle of paprika, sliced tomatoes, flaky salt + parsley to garnish
Using a can of chickpeas, simmer in a rolling boil for 30 minutes, drain and peel most of the skin off. Next add them to a food processor along with 1/4 cup tahini, 1/4 cup olive oil plus more if needed to reach desired consistency, juice of a medium lemon, 2 roughly chopped garlic cloves, 3 tsp of reserved aquafaba (liquid in canned chickpeas), 1/4 tsp cumin plus salt + pepper to taste
